Rinse the matjes fillets under cold water, drain and cut into bite-sized pieces. Layer herring, onion rings and dill alternately in a glass.
Bring red wine vinegar, water, sugar and the bay leaves to the boil and allow to cool. Pour the brew over the herring. Close the jar and let it steep in the refrigerator for 2 days.
Fried potatoes and a fresh salad go well with this.
