Instructions

  1. Cut off the ends of the beetroot, peel and cut into wafer-thin slices. Arrange in a fan shape on a platter or plate. Season with salt and pepper.
  2. Dice the shallot and mix all ingredients except the oil. Now slowly pour in the oil while stirring until it has a creamy consistency. Drizzle the dressing over the fanned May beets and let it steep for about 30 minutes.
  3. Baguette goes well with it.
