- Drain the wax beans, collecting the bean stock (should be about ¼ liter). Peel and finely dice the onion.
- Bring the bean stock to the boil with vinegar, oil, salt, sugar and diced onions.
- Put the wax beans in a bowl, grind plenty of pepper over them and pour the bean stock dressing over them. Sprinkle with the parsley.
- Let the salad steep for at least 1 hour. It also tastes lukewarm very good and goes very well with hamburger bread (see my recipes).
