Put the ground beef, salt, pepper, cumin, turmeric, thyme, hot pepper in a deep bowl, pour in wine vinegar or lemon juice, add garlic. (If you don’t like the garlic smell that is too pronounced, replace fresh garlic with a pinch of dried garlic.)
Wash the raisins and dried apricots under running water, cut into small pieces, add to the minced meat along with grated hard cheese.
Stir the minced meat until smooth, put in a baking dish, tamp lightly with a palm or spoon.
Whisk two eggs and milk in a bowl, season with salt and pepper.
Pour the milk-egg mixture into the minced meat in the form and bake in the preheated oven for 50-60 minutes, until golden brown on top of the casserole. If too much water builds up in the pan during baking, it will need to be drained.
Cool the bobotie meat cake slightly, remove it from the mold, cut it into portions, and serve. Delicious both hot and cold.
