Instructions

  1. Cut an onion into fine cubes and sauté in olive oil.
  2. Add the finely chopped Knofi and a little sugar and let it take color.
  3. Then add a little tomato paste and paprika, toast it slightly.
  4. Now deglaze with broth or tomato juice, depending on your taste, you can add chilli or cayenne pepper.
  5. Let the sauce simmer.
  6. Now peel and core the tomatoes (save the liquid from the tomatoes with the seeds), then dice the tomatoes, put them in a bowl, pour some lime juice, a pinch of sugar and salt over them, add the chopped coriander and let the whole thing steep.
  7. The mass with the kernels can now be passed through a sieve and the liquid poured into the hot sauce.
  8. The minced meat:
  9. 1 egg, 1 good tablespoon. Quark, onion, Knofi and season with salt, cayenne pepper and paprika.
  10. Shape into balls and fry lightly.
  11. After searing, I let the balls soak in the hot sauce, took them out and now put them into the cold tomato cubes.
  12. Finally, just add a bit of the hot, reduced sauce over it, so the tomato pieces keep their shape and still have something fresh.
  13. Either the whole thing as finger food at a party, but also delicious with rice, pasta or fried potatoes as the main meal.
