Squeeze the soaked rolls well. Mix all ingredients except the minced meat well with a dough hook. Then mix in the minced meat well by hand. Tip: It`s not such a mess with gloves. If the mixture is too soft, just add some breadcrumbs.
Shape the mixture into meatballs and place on a large plate. I always press a hollow in the middle. Then the meatballs are flatter and can be fried more evenly.
Heat a large pan with plenty of fat. Sear the meatballs on both sides, then cook for another 5 - 10 minutes with the lid closed. Place the finished meatballs on a plate with kitchen paper to soak up the excess fat.
