Meatballs with Sour Cream Sauce Instructions

  1. Bring rice and salted water to a boil over high heat. Reduce heat to medium and cook until half-cooked (roughly 10-15 minutes). Note: Use commercially minced meat or prepare your own; pork and beef combined work best.
  2. Allow rice to cool to room temperature. In a bowl, combine rice with minced meat, finely chopped onion, egg, salt, and black pepper. Mix thoroughly until smooth. If not cooking immediately, cover and refrigerate.
  3. Wet your hands with water and form the mixture into small meatballs. Roll each meatball in flour. Heat vegetable oil in a pan over medium-high heat and fry meatballs until golden brown and cooked through (roughly 8-10 minutes, internal temperature 63°C/145°F).
  4. Transfer meatballs to a saucepan. Pour water into the frying pan and heat it over medium heat, then stir in sour cream. Season with salt and black pepper to taste. Pour this sauce over the meatballs, adding more water if needed to completely cover them.
  5. Over medium-high heat, bring the mixture to a boil. Once boiling, reduce heat to low, cover, and simmer for 10-15 minutes.
