First put the 5 tablespoons of olive oil in a large bowl. Add the garlic, either pressed or cut very finely, and add a little salt. Now dice the fresh tomatoes and add them to the bowl. Stir well and set aside so that everything can flow well.
Now cut the bread into cubes and then sear it in a pan with oil in several portions over medium to high heat until the cubes are golden brown. Turn frequently, approx. 5 slices of toast fit in the pan at once. Put the finished cubes in a separate bowl and let cool.
Wash the rocket. Cut the remaining ingredients into cubes and then add everything to the bowl with the oil, garlic and tomatoes and mix well. If you want, you can add a little salt and pepper here.
Finally add the bread cubes, mix again and serve quickly.
If you are still waiting for guests, you can add the bread cubes later to keep them crispy!
