Instructions

  1. Clean the cauliflower, remove the stalks and grate the florets with a cheese or square grater until they look like semolina. Cook the grated cauliflower in the microwave (approx. 600 W) for approx. 8 minutes. No water needs to be added, as the natural moisture is sufficient. Then let the cauliflower cool down a little.
  2. Halve the zucchini and remove the stones if necessary. Then cut into thin slices. Drain the tomatoes (catch the oil!) And also cut into small pieces. Clean the mushrooms and cut into strips.
  3. Fry the zucchini, tomatoes and mushrooms together with the pressed garlic in the collected oil (you can use a little more oil). Then fold in the 8-herb mixture and season with salt and pepper (All `Arrabiata spice mixture is also great in it). Now mix the mixture with the cauliflower.
  4. Cut the Leberkäse into small cubes and fry as well. Add to the salad and wait a little before folding in the diced cheese (it shouldn`t melt!). It is best to let the salad steep overnight and season to taste again. Tastes wonderful with grilled food.
  5. Incidentally, the cauliflower has no cauliflower flavor, it takes the position of rice or couscous.
