  1. Soak the rolls for the meat dough. In the meantime, mix the minced meat with the chopped onion, egg and parmesan. Carefully squeeze out the rolls, tear into small pieces and mix with the minced meat mixture. Season well with salt, pepper and paprika. For the filling, dice the peppers, olives and sheep cheese and mix. Roll out the meat dough between two layers of cling film a good 1.5-2 cm thick and sprinkle with the sheep`s cheese mixture. Leave around 2 cm free at the edges. Now roll up carefully from the short side with the help of the foil. To do this, fold in the edge and then carefully pull the film upwards so that it practically rolls up the roll by itself. Press in the upper and lower ends a little. Wash the potatoes and cut into thin (max. 1 cm) wedges with the skin on. Grease a tray with olive oil and place the minced meat roll in the middle. Spread the potato wedges around the outside and sprinkle them with salt, pepper and oregano and mix them up again. Preheat the oven to 200 ° C. Place the ham slices around the minced meat roll so that they completely cover the surface. Carefully push the edges under the roast. Put the tray with the roast and potatoes in the oven for about 35 - 45 minutes. Turn the potatoes occasionally and make sure that the roast does not get too dark on the surface - in this case put some aluminum foil over it. Best served with a fresh salad!
