Put the eggs in a bowl and whisk with a whisk. Add oregano and season with salt and pepper. Put the mixture in a pan with a little olive oil and fry according to your preferences. Just before serving, add quartered cocktail tomatoes and fresh thyme.
Salad:
Chop the radishes, tomatoes and fennel, clean the lettuce and prepare a salad dressing with the lemon juice, olive oil, salt and pepper. Mix the ingredients well with the fresh mint leaves and the salad dressing.
Serving:
Place the goat cheese ball on a plate and pile the hot scrambled eggs on top. Put the salad on the plate and serve with some toasted bread.
Tip:
If you are keen to experiment, you can add even more herbs to the salad. A little fresh coriander (but it is very strict, so be careful) and fresh Thai basil would be highly recommended.
