Instructions

  1. For the chicken breast fillets, first make the glaze. To do this, dissolve the sugar in a small saucepan. Deglaze with vinegar, turn down the temperature, add the remaining ingredients (honey and tomato ketchup) and simmer over a low heat for about 5 minutes. Season to taste with salt, pepper, chilli and possibly garlic. The sauce should be slightly thick. If that is the case, put the sauce in a bowl or something similar, let it cool a little, then put the chicken breast fillets in it, cover all around with the sauce and let it steep. You can do this very well a few hours beforehand.
  2. Clean and wash the lettuce and cut or tear into strips or pieces.
  3. Heat a pan with oil and fry the chicken breast fillets on both sides until crispy. They should be fried slowly and only at medium temperature, because the caramelization of the sugar creates a light crust. Brush with a little of the sauce every now and then, so that a juicy and at the same time crispy crust forms. Then take it out of the pan, let it rest for a few minutes and then cut it into strips.
  4. Then assemble the burgers as follows.
  5. Cut the ciabatta buns, brush the lower half with a tablespoon of aioli, cover with salad, and put another tablespoon of aioli on top. Then place a chicken breast fillet cut into strips on top and then top it with a tablespoon of pesto roso.
  6. Place the top half of the ciabatta roll on top and enjoy your meal!
