Instructions

  1. Dice the dried tomatoes and add to the oat flakes. Mix with dried oregano. Pour boiling water over everything and let it soak for a few minutes. So much water should be used that the oatmeal is just covered with water.
  2. In the meantime, finely mash the tofu with a fork. Finely grate the carrot and zucchini and add to the tofu. Finely dice the spring onions, grate the parmesan and add to the tofu mixture. Chop the basil and thyme and add them as well.
  3. Add the egg, tomato paste and the swollen oat flakes to the tofu and season with pepper, a little cumin and salt and mix thoroughly. Add enough breadcrumbs to form a malleable mass.
  4. Shape the tofu mixture into patties and fry them in olive oil until golden brown.
