Wash the aubergines and zucchini, quarter them and cut into 0.5 cm thick slices. Core, peel and cut the peppers into bite-sized pieces. Place in a baking dish with the onions and garlic. Salt and pepper, sprinkle with herbs and drizzle with olive oil.
Put in the oven. After 20 minutes, it should be lightly browned, take it out of the oven in a preheated oven at 200 degrees and add approx. 100 ml of water. Put in the oven for another 10 minutes. Then stir everything carefully and taste delicious.
If you like, you can add some cream.
This dish can be eaten straight or with potatoes, pasta, rice or meat.
