Cut the zucchini into thin slices or flat strips, season with salt and leave to steep for about 20 minutes. Then cut the zucchini into bite-sized pieces or strips as desired.
In the meantime, cut the olives into slices and the dried tomatoes into strips, halve the cocktail tomatoes. Mix the zucchini with the olives, cocktail tomatoes, dried tomatoes as well as the rocket and possibly roasted pine nuts.
Season to taste with olive oil, a little lime juice and balsamic vinegar as well as mixed herbs and lemon pepper.
The individual amounts of ingredients can of course vary according to your mood.
