Carefully cut the meat in the middle (not all the way through) and carefully fold it apart. Cut the peaches open. Place a slice of boiled ham, about half a peach and a slice of cheese in each and close. Seal the meat with toothpicks or roulade needles to prevent it from falling out. Season with salt and pepper.
Beat the eggs and turn the meat first in the egg, then in the breadcrumbs and fry in the clarified butter.
