Instructions

  1. Cut open the top of the watermelon and remove the pulp or hollow out the melon. If the watermelon is to be used as a salad bowl, level the surface a little if necessary. The cut off upper part of the melon can also be used as a lid later.
  2. Peel a cucumber, remove the seeds and dice the cucumber. Place the cubes in the hollowed out watermelon. Also chop the pulp of the melon and put it back into the hollowed out melon.
  3. Wash fresh peppermint, 3 to 5 stalks depending on your taste, remove the leaves from the stalks and tear a little. Add this to the cucumber and melon as well. Mix everything together.
  4. For the dressing, whip balsamic vinegar, olive oil, honey and harissa paste into a creamy cream and season with salt and pepper.
  5. Pour the dressing over the mixed salad and fold in.
