Halve the melon, remove the stones, remove the pulp with a ball cutter and keep the hollowed out melon pods.
Clean and wash the rocket and spring onions and cut the spring onions diagonally into rings. Wash the cherry tomatoes and cut in half. Slice the Leerdamer thinly, mix with the other salad ingredients and fill the hollowed-out melon pods as desired.
For the dressing, mix together the oil and vinegar, season with salt, pepper and sugar and drizzle the salad with it. Serve with a crispy baguette if desired.
