Remove the peel from the melon and cut the melon into cubes. Wash the rocket and mint and cut into small pieces like the ham. Put everything in a bowl. Add the lime juice and the cane sugar. Season to taste with salt and pepper. Add the olive oil just before serving so that the rocket does not collapse.
The portion specification is of course based on the appetite. For two, 1/2 melon is a nice side dish.
