Roughly chop the walnuts and roast them in a pan without fat.
Halve the melon, remove the stones and use a ball cutter to remove even balls from the pulp. Cut the onion into fine strips and the peppers into fine cubes. Also cut the Parma ham into fine strips.
Mix a dressing from walnut oil, lime oil, balsamic vinegar, honey, pepper and salt.
Put the melon balls, diced pepper and onion strips in a bowl, pour the dressing over it, mix and let the whole thing stand in the refrigerator for at least 1 hour.
Before serving, fold the cleaned rocket into the salad.
Arrange the melon and rocket salad on plates and crumble the feta cheese over them. Also distribute the ham strips and the chopped walnuts on the salad.
This goes well with fresh baguette or roasted ciabatta and a well-chilled glass of white wine!
