Instructions

  1. Halve the melon and remove the stones with a spoon. Then cut the melon halves again into 4 wedges. Remove the peel and cut the melon pieces diagonally into slices.
  2. Peel the tomatoes (soak in boiling water for 10 seconds, quench) and cut into sixths, remove the inside so that only the outside flesh is on it. They then look like curved diamonds.
  3. Wash the rocket and drain well.
  4. Then arrange the ingredients on plates:
  5. Spread out the melon slices evenly at the bottom, spread the rocket over it and arrange the tomato sixths on top.
  6. For the vinaigrette, put the balsamic vinegar, oil, salt and pepper in a bowl and stir the whole thing with a small whisk until it becomes creamy, season again if necessary.
  7. Now drizzle the served ingredients with the vinaigrette and serve.
  8. The oil and vinegar separate again after a short time - then just stir again.
