Instructions

  1. Soak apricots in hot water for 30 min, then cut into small cubes. Quarter onions and cut into thin strips. Peel ginger and grate finely.
  2. Melt sugar in a saucepan over medium heat until caramelized. Add onions and stir until browned, about 3-4 min. Deglaze with vinegar, then add curry powder and tomato paste. Stir in ginger and apricots. Season with salt and pepper.
  3. Brown minced beef in a large saucepan over medium-high heat in fat until brown and crumbly, about 5-7 min. Add onion mixture and season with salt, pepper, and Worcester sauce. Simmer covered over medium-low heat for 10 min. Preheat oven to 180°C (350°F).
  4. Whisk eggs with milk. Put meat mixture in a casserole dish. Pour egg mixture over meat. Distribute grated cheese evenly over the casserole.
  5. Bake uncovered at 180°C (350°F) for 30 min until set.
