Instructions

  1. Peel the avocados and remove the stone. Puree 2 avocados and place in a bowl. Add the lime juice and olive oil and stir in. Season to taste with salt.
  2. Cut the other two avocados into strips and drizzle with the lemon juice. Peel or clean the peppers, onions and chilli and dice finely. Finely chop the parsley. Drain the kidney beans and corn.
  3. Mix all the vegetables into the pureed avocados. If necessary, season with a little salt and pepper.
  4. Tip: This salad is also a good side dish when grilling.
