Slice the washed carrots lengthways, then cut into strips. Wash and clean the spring onions and cut diagonally into slices. Slice the meat thinly.
Brown the meat in hot oil in portions and remove from the pan. Fry the carrots in the same fat for 2-3 minutes while stirring, season with salt and pepper. Add the meat and spring onions, heat while stirring and season with soy sauce.
