Instructions

  1. Mix 150 ml rice flour, 50 ml sugar, 150 ml water (or tea), and optionally a dash of coconut milk in a bowl and stir well.
  2. Brush a microwaveable dish with a thin layer of oil.
  3. Pour the mixture into the dish and loosely cover with baking paper.
  4. Microwave on full power for 4-6 minutes, stirring halfway through (at 2-3 minutes) for even consistency.
  5. Remove from microwave once the mixture becomes a chewy, sticky mass.
  6. Flour your hands with potato starch to prevent sticking.
  7. Shape the mochi into small balls or desired shape.
  8. Optionally coat with sesame seeds, black sesame, or desiccated coconut.
