Instructions
- Mix 150 ml rice flour, 50 ml sugar, 150 ml water (or tea), and optionally a dash of coconut milk in a bowl and stir well.
- Brush a microwaveable dish with a thin layer of oil.
- Pour the mixture into the dish and loosely cover with baking paper.
- Microwave on full power for 4-6 minutes, stirring halfway through (at 2-3 minutes) for even consistency.
- Remove from microwave once the mixture becomes a chewy, sticky mass.
- Flour your hands with potato starch to prevent sticking.
- Shape the mochi into small balls or desired shape.
- Optionally coat with sesame seeds, black sesame, or desiccated coconut.
