Instructions

  1. Mash the banana with a fork until the mixture is mushy. It is irrelevant here whether it is soft or hard. If it is very hard, it is advisable to use a blender or crush it with a knife. Add the eggs and mix well.
  2. Place half in a microwave-safe bowl with a lid and seal. Cook at 600 watts for 3.5 minutes. Be careful when opening as the steam is very hot.
  3. Do the same with the rest of the banana and egg mixture.
  4. Place on a plate and serve with maple syrup and fruit if necessary.
  5. Since the pancakes are not fried, they are very light but taste the same.
