Instructions

  1. Wash, clean and dice the spring onions, cut the greens into rings.
  2. Put the butter in a flat glass bowl and cook covered in the microwave for about 3 minutes at 700 watts. Remove and whisk with the eggs and water. Season with salt, pepper and nutmeg. Cook uncovered for about 4 minutes at 450 watts, pushing the scrambled eggs together several times with a spoon.
  3. Serve sprinkled with the onion greens.
