Instructions
- Beat 3 eggs with 3 tablespoons hot water using a hand mixer on highest speed for 1 minute until frothy.
- Mix 150 grams sugar with 2 packs vanilla sugar and gradually sprinkle into the egg mixture over 1 minute while beating.
- Beat for 2 more minutes on highest speed.
- In a separate bowl, mix 100 g flour, 50 g cornstarch, and 1 teaspoon baking powder.
- Sift half of the flour mixture onto the egg cream and stir on lowest mixer speed for 30 seconds.
- Add the remaining flour mixture and stir on lowest speed for another 30 seconds until just combined.
- Grease a 40 x 25 cm baking pan and line it with baking paper.
- Spread the batter evenly into the prepared pan.
- Preheat oven to 180°C (356°F) and bake for 10–15 minutes using convection until golden.
- Turn the cake out onto a clean surface and carefully peel away the baking paper.
- Let the cake cool completely.
- While the cake bakes and cools, carefully separate each milk bar into two wafer halves and the cream filling using a knife.
- Place the milk bar cream filling in a bowl and add 1 cup (200 g) sour cream. Stir briefly on lowest mixer speed until combined.
- In another bowl, whip 2 cups whipped cream for 20–30 seconds.
- Add 2 packs cream stabilizer and continue whipping until stiff peaks form.
- Fold the stabilized cream gently into the milk bar cream mixture until no streaks remain.
- Spread the entire cream mixture evenly over the cooled cake base.
- Arrange the milk wafer lids closely together on top of the cream layer and press lightly to secure.
- Refrigerate the cake for at least 2 hours until set.
- If using a baking frame, run a knife around the edges and carefully remove it before serving.
