Wash the broccoli and cut into small pieces if necessary. Boil the vegetable stock, add the broccoli and cook for about 15 minutes.
Peel and dice the onions. Sauté in hot oil. Add the minced meat, season with salt and pepper and fry until crispy.
Pour off the finished broccoli (hold back some of the broth if necessary) and purée finely with the hand blender. Add the minced meat and cream and season again if necessary.
