Chop the onion and garlic. Use a vegetable peeler to make vegetable noodles from the carrots and zucchini. Chop the large tomatoes.
Fry the onion and garlic in a little oil. Add the minced meat to the pan, fry it and season with salt and pepper. I also like to use a minced meat spice that I bought in the supermarket. Then add the tomato paste and fry. Keep stirring until the tomato paste is evenly distributed. Then add the cream cheese and stir until it is nicely distributed. Add the chopped tomatoes to the pan and cook until they are a little soft and the dish has a creamy consistency.
Deglaze the minced meat sauce with 200 ml water and let it simmer a little. Then add the vegetable noodles. Turn down the temperature a little and let the dish simmer until the vegetable noodles are nice and soft.
If you want, you can add a handful of grated mozzarella at the end. Stir the dish vigorously again and serve.
