Instructions

  1. Bring the vegetable stock to a boil. Add the soup vegetables, tomatoes and herbs. Let the soup simmer according to the package of the vegetables. Add the noodles appropriately so that they are cooked for the rest of the time. Finally season with salt, pepper and sugar and enjoy.
  2. This is a basic recipe, but I find it very tasty. It`s also super healthy and quick to prepare. If I have more time, I like to add semolina dumplings. Other herbs and possibly white beans can of course also be added. At least I would not swap marjoram and savory, as these herbs are important for the typical taste of minestrone. If you like, you can sweat a clove of garlic at the beginning and only then add the vegetable stock.
