Chop the pretzel sticks or pretzels. Whisk the eggs with milk, chopped parsley, salt and pepper and add. Let soak for a good 2 - 3 hours and stir in between. Then roughly puree with a hand blender.
Shape the mixture into small balls with damp hands. Bring the vegetable stock to the boil, add the balls, pull the pan away from the stove and let the dumplings sit with the lid on for about 10 minutes. Now and then turn. Then lift out.
They are good as a soup or with sliced meat with sauce.
