Instructions
- Wash and dry the steaks, then unfold them flat.
- Spread roughly 25g of the cream cheese with herbs on each slice of Parma ham.
- Place a sage leaf and 2 pieces of dried tomato on top of each ham slice, season with salt and pepper to taste, then roll up.
- Place one ham-and-cheese roll inside each steak and secure with wooden skewers or beef needles.
- Heat olive oil in a large pan with a lid over medium-high heat.
- Fry the steaks for 1 minute per side until golden.
- Add a splash of sherry to the pan and cover with the lid.
- Reduce heat to low and braise for 10 minutes until the pork reaches 63°C (145°F) internally.
- Remove the steaks to a warm plate and season with salt and pepper.
- Fry the pink pepper in the same pan over medium heat for 30 seconds.
- Add a splash of sherry to deglaze the pan, scraping up any browned bits.
- Pour in the meat broth and bring to a boil over medium-high heat.
- Gradually add the cream and reduce the sauce over medium heat for 5 minutes until thickened.
- Serve the steaks with the sauce and gnocchi or spaetzle.
