Mirabelle Cream
Instructions
- Pit the mirabelle plums (if necessary) and puree them with any juice.
- In a large bowl, combine the plum puree, yogurt, cream cheese, lemon juice, lemon zest, and vanilla sugar.
- Season to taste with sugar.
- Soak the 12 gelatin sheets in cold water for 5 minutes until softened.
- Squeeze excess water from the gelatin sheets and place in a small bowl.
- Pour about 50 ml hot water (70°C / 160°F) over the gelatin and stir until completely dissolved.
- Stir 3 tablespoons of the plum cream mixture into the dissolved gelatin.
- Pour the gelatin mixture into the remaining plum cream and stir until fully combined.
- Refrigerate for about 1 hour, stirring occasionally, until the mixture is slightly thickened but still pourable.
- In a separate bowl, whip the 200 ml cream with 2 tablespoons sugar for about 2-3 minutes until stiff peaks form.
- Fold the whipped cream gently into the partially set plum mixture.
- Divide among 8 portion glasses.
- Refrigerate for at least 2 hours until completely set.
