Instructions

  1. Core the mirabelle plums, if necessary, and puree with the juice, mix with yoghurt, cheese cream, lemon juice, finely chopped lemon zest and vanilla sugar, season with sugar. Soak and dissolve gelatine according to the instructions on the packet. Mix 3 tablespoons of mirabelle plum cream into the gelatine, then stir the gelatine and mirabelle plum mixture into the whole mirabelle plum cream. Chill until the mixture starts to gel. In the meantime, whip the cream with the sugar until stiff and fold into the cream. Fill into portion glasses and chill. Garnish with chocolate flakes and lemon balm or mint leaves.
