Instructions

  1. Cut the soup greens into small pieces. Also chop the spring onions and set aside the green part as a garnish.
  2. Heat some sesame oil in a saucepan. Sauté the vegetables in it for 5 minutes and lightly season with salt and pepper. After 5 minutes stir in the spinach and soy sauce. Pour 700 ml of water, put the lid on and let the soup simmer for 10 minutes.
  3. In the meantime, drain the abalone pieces and pat dry. Heat some oil in a pan and fry the abalone pieces all around until crispy.
  4. Pour water over the udon noodles and let it steep for 3 minutes, then drain and divide into two bowls.
  5. After 10 minutes, mix the miso paste with the rest of the water and add to the soup.
  6. Divide the soup between the two bowls and place the abalone pieces on top of the vegetables and noodles. Sprinkle the soup with the green part of the spring onions and serve.
  7. Note: Mock Abalone is a vegan substitute product made from seitan and imitates the abalone sea snail popular in Asia. You can get mock abalone and thick udon noodles in the Asian market.
