Instructions

  1. Halve the chicory, cut out the stalk in a wedge shape and the leaves fall onto the work board. Remove the outer, withered leaves from the radicchio, then cut in half, cut out the hard roots and loosen the leaves. Rinse and drain the chicory and radicchio leaves briefly. Wash the lamb`s lettuce thoroughly and cut off the stems with the roots. Drain well too.
  2. Peel the mango and cut the flesh from the fibrous core. Clean, wash and finely chop the spring onions. Cut the chicory and radicchio into bite-sized pieces.
  3. Mix together lemon juice, oil, salt, cayenne pepper and honey. Mix in the chicory, lettuce and spring onions. Serve with the mango slices.
