Mix salt, pepper, cardamom and apple syrup or honey with the vinegar until the salt has dissolved. Add water and then mix in the oil. Finely chop the clove of garlic (or press through the press) and add to the sauce. Taste! Fillet the orange, collect the juice and add to the sauce. Wash and clean various types of lettuce. Halve the chicory lengthways, remove the stalk and cut into narrow strips. Cut the radicchio into strips. Slice the mushrooms and the tomatoes into small pieces. Mix all the salad ingredients and carefully fold in the sauce. Sprinkle with pink pepper and serve.
