Instructions

  1. Peel and cut the potatoes into large cubes and cook in salted water in a large saucepan. In the meantime, finely dice the bacon (or coarser if you like it) and fry in a pan. Clean the parsley in bunches and chop finely.
  2. When the potatoes are cooked, drain and add the parsley and the rendered bacon to the pot. Swirl in the pot. Fry the eggs into fried eggs and top it all off.
  3. This is a recipe from my youth. If you feel like doing something strong. A delicious green salad or pickled beetroot goes well with it.
