Grate the potatoes and onions. Mix in the salt, eggs and oatmeal and stir until smooth. (Never leave the spoon in the batter, otherwise water will form!)
Put enough oil in the pan (potato pancakes must float in the oil). Then add tablespoon-sized portions to the pan, smooth out a little and bake until golden on both sides.
Finally, drain the potato pancakes on paper towels and serve with applesauce or sugar to taste.
