Instructions

  1. Cut the pork fillet in half lengthwise. Cut the meat into thin strips along the grain.
  2. Using a mortar, crush the 2 cloves of garlic with the salt until it forms a paste.
  3. Transfer the garlic paste to a bowl. Add the olive oil, lemon juice, ground cumin, coriander powder, cayenne pepper, paprika powder, and pepper to taste. Stir until well combined to make a marinade.
  4. Add the meat strips to the marinade and coat them evenly. Cover the bowl and refrigerate for 2 hours.
  5. Thread the marinated meat strips onto kebab skewers in a zigzag pattern.
  6. Heat a grill or pan to medium-high heat. Grill the skewers for 2-3 minutes per side until the pork reaches 63 °C (145 °F) internally.
