Wash and dry the thawed scampi. Cut the garlic, chilli, ginger, tomatoes and the onion into small cubes.
Heat 150 ml of olive oil in a wok or deep pan. At the same time, cook the pasta in plenty of salted water according to the instructions on the packet.
Add the garlic, chilli, ginger and onion to the oil and fry for about 5 minutes until the garlic is golden brown. Add the scampi. After another 5 minutes add the tomatoes.
In the meantime, the noodles are ready. Gradually add these and pour in the rest of the olive oil. Let fry for another 5 minutes. Season to taste with salt, pepper and parsley.
