Make a marinade from the olive oil, balsamic vinegar, pepper and salt. Divide the mozzarella into approx. 16 pieces and add them to the marinade for approx. 15 minutes. In the meantime, peel and core the mango. Cut into pieces about the same size as the mozzarella. Cut the spring onions into pieces approx. 2 cm long.
Skewer a piece of mango, spring onion, mozzarella and a leaf of basil on each of 16 toothpicks. Finally, lightly mortar the pink peppercorns and sprinkle them over the skewers.
