Mozzarella and Salmon Sandwiches Instructions

  1. Cut the mozzarella into thin slices.
  2. Heat a dry skillet over medium heat. Fry the bread slices for 5 minutes on one side until lightly browned, then flip and fry for 4 minutes on the other side until crispy.
  3. Immediately place mozzarella slices on the hot toasted bread.
  4. Let cool slightly until the mozzarella is set.
  5. If using fresh salmon, cut into thin slices. Otherwise, use pre-sliced smoked salmon.
  6. Layer the salmon on top of the mozzarella.
  7. Chop the fresh basil finely.
  8. Garnish with basil and cut the sandwiches diagonally to serve.
