Instructions

  1. For the rolls, heat the milk (do not boil) and let the mozzarella soak for about 10 minutes. Prepare the basil leaves and salmon. Carefully roll out the soft mozzarella to an even thickness of 3 mm. Then completely cover with basil and salmon (in this order) and roll up. Wrap the roll in cling film and compress and stabilize by pulling on the film several times while rolling it up. It is best to let it rest overnight in the refrigerator.
  2. For the dressing, reduce the orange juice with a few slices of ginger root to half the volume. Add mustard, honey and, depending on your taste, a dash of white balsamic vinegar (browner is also possible, but it spoils the color a bit) into the orange-ginger stock, then gradually stir in the olive oil. Season to taste with salt and pepper.
  3. Spread rocket on large plates (it`s also good with Rapunzel) and decoratively distribute the mozzarella rolls, cut into thin slices, about 5 mm. Garnish with cocktail tomatoes and drizzle with the dressing.
  4. By the way: Jakob says that this recipe with buffalo mozzarella doesn`t work.
