In a bowl, beat the 2 eggs with salt to taste using a fork. Pour the milk into a second bowl and the wheat flour into a third bowl.
Drain the mozzarella from its brine and pat dry with paper towels. Cut into slices roughly 0.5-0.6 cm (about 1/4 inch) thick.
Dip each bread slice briefly in milk, about 1 second per side, then place a mozzarella slice between two bread slices and press gently to seal.
Coat the sandwich in wheat flour, shaking off any excess.
Dip the floured sandwich into the beaten egg to coat all sides.
Heat the olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
Place the egg-coated sandwich in the hot oil and fry for 2-3 minutes until the bottom is golden brown, then flip and fry the other side for 2-3 minutes until golden brown.
Transfer to a napkin or paper towel to blot excess oil. Let rest for 1 minute.
Slice diagonally in half and serve immediately while the bread is warm and the cheese is melted.
