Instructions

  1. In a saucepan over medium-high heat, combine the red wine, balsamic vinegar, and sugar. Simmer for 8-10 minutes, stirring occasionally, until the liquid is reduced to roughly one-third of the original volume and coats the back of a spoon with a syrupy consistency. Remove from heat and let cool.
  2. Wash the strawberries, pat dry, and cut into pieces.
  3. Wash the basil, shake dry, and pluck the leaves. Reserve roughly a third of the leaves for garnish and cut the remaining leaves into strips.
  4. Arrange the mozzarella slices on small plates.
  5. In a small bowl, combine the cooled balsamic reduction with roughly an equal amount of grape seed oil, freshly ground black pepper, the cut basil strips, and strawberry pieces. Mix gently.
  6. Spoon the strawberry mixture over the mozzarella slices and garnish with the reserved basil leaves.
