Wash and spin (or drain well) the rocket. Peel the mango and cut into thin slices, drain the mozzarella and cut into thin slices.
Spread the rocket on a platter, place the mango slices and mozzarella on top, season with salt and pepper. Beat the orange juice (and possibly the orange peel, if available), the balsamic vinegar and the olive oil with a little salt with the whisk or, even easier, shake it in a screw-top jar and pour over the salad.
Finally, add a few parmesan shavings (which are best made with a peeler).
There is also fresh ciabatta bread.
TIP: I like it even better with a dressing made from mango balsamic vinegar and a little olive oil with orange. Then you can leave out the orange juice.
