Puree the bananas in the blender, mix well with the oat flakes, almonds, apricots, dates, vanilla and cinnamon. Line a 22 x 16 cm baking sheet with parchment paper and spread the mixture on top. Since the mixture is easy to shape, you can also use a larger baking sheet and form an approximately 2 cm high rectangle out of the dough.
Bake in a preheated oven at 180 ° C top / bottom heat for approx. 25 - 35 minutes (depending on the oven). Cut into bars while still warm.
