Instructions

  1. Roughly cut the dried fruits into small pieces. All fruits are suitable, I especially like apricots, plums, raisins and apples. Chop the nuts small, hazelnuts, cashews, almonds, pecans, walnuts are my favorites.
  2. Make a smooth dough with the remaining ingredients. Knead for at least 5 minutes. Just before the end of the kneading time, add the fruits and nuts. The dough is quite thin and sticky at first, but when it is kneaded enough it becomes nice and elastic. Cover the dough and let it rise warm for 1 hour or in the refrigerator for 6 hours.
  3. Place the dough on a lightly floured work surface and divide into 2 parts for large loaves, 4 parts for small breads, 12 parts for rolls and leave to rest for 5 minutes. Now shape long loaves or rolls. Wet with a little water and roll in the oat flakes. Let the bread rise for 1 hour, the rolls for 3/4 hour.
  4. Preheat the oven to 250 ° C. Cut breads as desired. Put in the oven, reduce the temperature to 220 ° C, steam well. Large loaves of bread take 25 minutes, small ones 15 minutes, and bread rolls 10 - 12 minutes.
  5. You don`t really need a spread for this, they are sweet and hearty with a bite. Of course, jam, honey or butter still taste great with it.
  6. Variations: You can of course make a pure raisin bread or apricot bread out of it. The types of flour can also be varied. If you don`t like whole grains, try the 1050 or just 550. Instead of oatmeal, poppy seeds or sunflower seeds also taste good.
  7. I love this bread because it is great for a sweet but not sugary start to the day and is incredibly versatile.
