Instructions

  1. For 12 muffins.
  2. First separate the eggs and beat the egg whites into stiff snow.
  3. Now stir the butter and sugar until very frothy. Gradually add the egg yolks and stir well. Add the vanilla sugar and lemon zest. Now mix the flour with the baking powder and sieve over the egg mixture. Gradually add the milk (the dough should fall viscously from the spoon and not become too mushy). Stir in the rum and finally fold in the egg whites. Finally, place paper cases in the hollows of a muffin tin and then use a spoon to pour the dough into the molds.
  4. First bake the muffins in the preheated oven at 200 ° C. After 10 minutes, switch down to 180 ° C and continue baking until the muffins are golden brown.
  5. Tip: You can now be very creative and make the muffins in many different variations - e.g. with chocolate drops, cocoa powder or with fruits such as blueberries or raspberries.
